Delicious JAMBALAYA-INSPIRED ONE-POT MEAL

Do you ever crave the taste of New Orleans but don’t have time to spend all day cooking some Jambalaya? Would you rather just have some way to add the ingredients with little prep and have your dinner ready in 2 hours with little effort?

VitaClay brings New Orleans to you with this fabulous one-pot Jambalaya-inspired rice dish. It incorporates rice, sausage, shrimp, chicken and lots of veggies and broth for a well-rounded, delicious, easy meal.

This one-pot meal tastes like you spent all day making it. All you have to do is place all the ingredients into your VitaClay cooker, push the “rice” button and you will have Jambalaya for dinner tonight in less than an hour. It’s that easy!

Ingredients:

  • 1 ½ c rice
  • 1 lb Andouille sausage, chopped
  • 1 lb shrimp, peeled and deveined
  • 2 c cooked chicken, shredded
  • 4 c chicken broth
  • ½ sweet onion, chopped
  • 4 oz green chilies, diced
  • 1 T tomato paste
  • 2 T creole seasoning
  • chopped parsley for garnish

Directions:

Pre-rinse and drain the rice until the water runs clear.
Throw all ingredients except parsley into VitaClay.
Cover, seal and cook on the white or brown “rice” setting, depending on the type of rice you are using
The rice setting is optimized to cook perfectly, and it will be done in 30-45 minutes.
The cooker will automatically switch itself to warm once the cooking is complete
When it beeps, allow it to “rest” for 15-20 minutes before opening. This steams the rice to perfection–trust us–it makes a difference!
Serve with a garnish of chopped parsley and enjoy
